With
all the great lettuces available now, you can offer some
dressings to complement the greens you're buying.
Salad greens are wonderful, delicate, and offer a unique
flavor of their own. They need very little. Find an olive
oil that is really special in flavor to you (olive oils
are like wines; it's all a matter of personal taste).

Mesclun mixes (a variety of baby lettuces) are delicious
with a quick shining of oliveoil, a touch of salt, and
nothing more.
A
basic vinaigrette: a mixture of good olive oil and vinegar
(try white balsamic) with some fresh herbs, a touch of
French Dijon mustard and shallot, lightly coating fresh
greens with perhaps some shaved salata ricotta cheese
on top. Transform your salad mix to an exquisite first
course or luncheon entree.
